Pork and Paprika Stuffed Squid Baked in a Tomato and Chilli Sauce

This delicious stuffed squid recipe has a spicy paprika and pork filling, baked in spicy tomato sauce. It doesn't get much better than this!

What you’ll need

  • 3 squid tubes (cleaned, tentacles, spine and guts removed)
  • 400g pork mince
  • 100g breadcrumbs
  • 1 egg
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 3 tins tomatoes
  • 2 cloves garlic, sliced
  • 1tbsp harissa paste
  • 1 tbsp red wine vinegar
  • Olive oil

Step 1

Start by making the tomato sauce in an oven proof heavy based skillet. Heat olive oil in the pan and gently cook the garlic with the harissa paste, Add the tins of tomatoes along with a tin of tap water. leave to simmer whilst you get on with the squid.

Preheat the oven to 180’c. Mix together the pork mince, breadcrumbs, oregano, paprika, cumin and egg forming the stuffing mix.

Stuff the pork mix into the squid leaving a couple of cm at the top.

Lay the squid into the tomato sauce and bake for 45 mins.
