The shell of the abalone (or ormer) is nondescript grey-brown outside but fabulous mother of pearl inside. You will keep it forever. The label tells you how to remove the meat from the shell (not difficult) and includes a great recipe padding out your abalone with wild mushrooms. ALL PACKS COMPRISE ONE ABALONE, and at these prices, you'll certainly get away with splitting even a small shell between two. It's not always easy for us to source this fish, so you might be offered several different kinds here. Our smaller abalone are about 7 centimetres long; the largest, 10 cms.
