A rare purchase - straight over from Chesapeake Bay. This American cousin of the European sea bass has always been held in high esteem in its homeland... As early as 1634, a New England commentator said "The basse is one of the best fishes in the country... delicate, fine, fat.. wholesome to the stomach" (quoted in that very fine book, Alan Davidson's North Atlantic Seafood). The very large fish we bought yielded excellent thick fillet steaks.
