The mysterious Bombay Duck - an item you may be familiar with in its crackling dry super-spicy version, does indeed start out as a genuine fish, properly known as bummalo. They're about the size of an anchovy, and we're afraid you'll be cleaning them yourself. But it only takes a minute and is well worth the effort - they're very tasty, and you can eat the bones. Simply coat in flour or batter, and fry briefly.
