A member of the shark family, also known as huss and once upon a time as 'rock salmon' with firm and tasty flesh. Dogfish is virtually free of small bones. We offer it in two forms: as a flat-ish fillet with the central cartilaginous bone (and the small ones too) removed, or in its "log" shape, as an on-the-bone steak.
