The easiest way to enjoy this superb fish. The long legs have been cut into sections six to eight inches long, packed with wonderful sweet white meat. The thick first joint of the leg ("upper leg" - see picture) is the most luxurious part - we offer this in packs of two sections, which would serve two people generously or four without embarrassment. The leg gets narrower below the first joint, so you get more shell and less meat per gram, although the eating experience is no less exciting. We sell these lower leg sections in 500g packs containing four to eight sections.
DO NOT attack these sections with a cracker. That will crush the meat inside. The shell is like tough polythene. UPPER SECTIONS: cut lengthways with a sharp knife and serve in shell - see this. LOWER SECTIONS: you'll need a lobster pick.
