The fabled black cod (also known as sablefish and - in Japan as gindara) from Alaska has always been a great favourite in Tokyo sushi bars, which have long taken the main share of the catch. That's why it costs so much. It has a silky texture and is rich in oils. Normally contains between 6 and 12 matching pieces.
