Smoked haddock and bacon... handmade wild salmon... they're all terrific fish cakes... But some tastebuds yearn for the simple pleasures of old. And this fishcake is one of them. Indeed, it's so traditional, it doesn't even get worked up about exactly which fish it's made from (either cod or coley, depending on availability). Handmade by "Kevin and Paul" in Grimsby to their mum's recipe, which was probably her mum's. This includes 48% fish, plenty of fresh parsley, a splash of anchovy paste and another of red pepper sauce, and some jolly nice breadcrumbs.
