Made for us by a local party-catering firm with a blue-chip client list, thesefish cakes contain 50 per cent salmon, blended with potato, lemon juice, capers, parsley, anchovy essence, egg, cayenne pepper, butter and nutmeg (or a Thai concoction) - ever-so-lightly coated in crisp breadcrumbs.
