These scallops are hand caught by divers. No machinery is involved in catching and processing: that's good for eating quality and good for the sea bed. They're vacuum-packed in units comprising one good main course or two generous starters. Each scallop is individually frozen, so you can use as many or few as you wish per meal. There are many dubious techniques for "enhancing" the weight of scallops to make them seem less expensive. We do not entertain any of them.
