Whereas prawns only turn pink (and lobsters red) when cooked, the langoustine is a lovely pink in real life. The claws add to its appeal, but only visually: the sliver of meat inside them is rarely big enough to taste. We sell three sizes (although we don't always have all three in stock). Size M is what you might call "edible garnish" - a bit disappointing if they are the main point of the dish. Size XL is more serious and XXL (min 150g per fish) will leave the Joneses in your dust.
