The megrim is a perfectly fine fish, but it has a problem - due to similarity of looks and name, it provokes comparison with the Dover sole. This is a contest it will never win: the flesh is less fine, the taste less sublime. But the contest is a nonsense: as if to compare mushrooms with truffles. The megrim IS good enough for Rick Stein's menu, and it has two other significant attractions: 1) it's not overfished, and 2) it doesn't cost an arm and a leg... It's time you tried it! Our "whole" fish have all had their heads and tails trimmed just like this.
