Mojama is tuna fillet which has been air dried - traditionally for at least a month - on the hot, dry and windy south west coast of Spain. The drying reduces the weight by half (and helps explain the price). The result is exquisite and unique - an intense taste that goes a long, long way. Shave onto a crisp green salad, or serve in slices with fine bread and one of those £10-a-bottle olive oils. Sensational! As a "main item", we reckon you need about 30g per portion. Lasts for several weeks in your fridge.
