Ortiz is an iconic Spanish producer of the highest quality fishy delicacies. You can see their website complete with fine sepia photos going back a long way here. They produce many specialised versions of tuna using line caught fish from the Cantabrian Sea (the southern end of the Bay of Biscay). Bonito del norte (aka albacore or white tuna) is considered the best. They all have subtly different flavours. The escabeche - in a light vinegar - is our favourite.
