Saba - sushi mackerel

Outer translucent skin removed, leaving the colourful inner skin in place. Deboned and beautifully trimmed. In Japan, mackerel sashimi is almost always marinaded in rice vinegar (sushi-zu) and we also like it this way. Normally contains 6 to 12 matching pieces. The belly and back cuts are subtly different.
