Need a large presentation salmon? Unless you want to take out a mortgage for a WILD fish, this is the one you want. It's from a farm which is a member of the RSPCA fish-farming monitoring scheme. It's gutted and scaled, and therefore ready to pop into your fish kettle. These fish are normally 4-5kg, which means they wil be about 30 inches/76cms long. If you are intent on cooking in a 24" fish kettle, note that you will not squeeze in any fish over 4kg, and even then you will have to cut off the head and tail. If the salmon is the only item you are serving as a main course, you will need about 200g of whole fish per serving (which, ignoring the bones, will give you 130g of meat).
