Our organic salmon is farmed in the Shetland Isles to the high standards demanded by The Organic Food Federation. It's paler than normal farmed salmon. Your fish has been descaled and cleaned. You will need a 24 inch fish kettle, and even then you are likely to need to remove the head and /or tail of any fish larger than 2.3kg (a 4kg fish is about 30 inches from nose to tail). WHAT SIZE OF FISH SHOULD I BUY? If the salmon is the only item you are serving as a main course, you will need about 200g of whole fish per serving (which, ignoring the bones, will give you 130g of meat). Please note we also normally have RSPCA (same idea, different approach) which come from a different farm and may be in a different size range from our organic salmon.
