The sea trout starts out as a fresh-water brown trout, before emigrating seawards. There it changes its spots into a fish virtually indistinguishable from salmon, and at least equally esteemed by cognoscenti. These fish have been cleaned and are ready to cook. You will need 150-300 grams of whole fish per serving. A 1500g fish will feed 6 people well. All these fish will fit nicely into a 24 inch fish kettle and those below about 1600 grams, into an 18" kettle. All stock is from the 2010 season.
