Produced from larger turbot, these are "quarter cut" fillets meaning we have cut the heart-shaped fillet lengthways into two portion-sized halves. We also offer "fatboy" fillets which are the best of all (because they are the thickest part of the fish) and you'll find those here. But these slimboys cost less gram for gram and are from the same fish.
