Ortiz is an iconic Spanish producer of the highest quality fishy delicacies. You can see their website complete with fine sepia photos going back a long way here. They produce many specialised versions of tuna using line caught fish from the Cantabrian Sea (the southern end of the Bay of Biscay). Atun claro refers to yellowfin tuna, less pricey than the albacore (which is here), but still very special. The organic oil (when available) has a slightly stronger taste of oil.
