Our monkfish liver is from "Connétable", a well-known French producer of culinary specialities. It comes in a tin - about half the size of a baked beans tin - out of which slides some - to be honest - pretty nondescript pieces swathed in a luminous orange oil (which is from the liver, as the only added ingredient is salt). You can slice or spread them. Either way, they taste delicious! Twirl your pepper mill, add a twist of lemon, and pile on thin toast. A green salad and a glass of champagne would make the occasion pretty heavenly.
