Thai Crab Salad

Serves 4

The traditional Thai flavourings in a classic nam jim sauce complement the delicate crab meat perfectly, but be sure to dress the dish at the last minute to avoid too much chilli heat.

500g (1¼ lb) giant red crab meat
2 garlic cloves
1 bunch of coriander stems
1 pinch of sea salt
1 green bird’s eye chilli
30ml (2 tbsp) palm sugar
30ml (2 tbsp) fish sauce
45ml (3 tbsp) lime juice plus 1 lime for garnish
2 red shallots
1 handful of wild rocket leaves
1 large, mild red chilli (optional)

1 First make the sauce by peeling the garlic and pounding this with the washed coriander and a pinch of salt using either a pestle and mortar or use a wet grinder. Chop the green chilli finely and add this to the mixture, continuing to pound/grind. Finely chop the shallots and stir into the garlic, finally adding the sugar, fish sauce and lime juice. Mix well.
2 Taking the crab meat, break this up into smaller pieces and place on to a serving plate. Spoon around 60ml (4 tbsp) of the sauce on top.

To serve:  scatter the rocket leaves through the crab and add a sprinkling of finely sliced red chilli for an extra kick. Lime wedges provide a cooling and pretty garnish.
