Try something simpler - just make it.



2 cod fillets
Plain flour seasoned with salt and pepper
Desiccated coconut
Oil for frying
1 egg, beaten
1 Pat the fish dry with a kitchen towel then coat lightly with flour.

2 Brush the egg onto the fish then sprinkle with coconut. Press on lightly.

3 Fry in hot oil for about 5 minutes.
