Fried Skate with Cream and Caper Sauce Fish code 100455 or 100505 Serves 4





4 Skate wing portions
Butter for frying
Sauce
50g/2 oz butter
6 tbsp of cream
2 tbsp of capers
Salt and pepper
1 Coat the wings in seasoned flour and fry in batches for 3-4 minutes on each side in butter. Keep warm in a moderate oven.

2 For the sauce, melt the butter, stir in 3 tbsps of the cream and keep stirring over a medium heat until it reduces and thickens.

3 Add the remaining cream, salt, pepper and then the capers.

4 Serve skate wings with sauce poured over .
