2 mahi mahi fillets
Oil
Herbs eg basil, tarragon
1 Wash the fillets briefly under running water. Pat dry.

2 Brush them (and the grilling surface) with oil, sprinkle herbs onto both sides.

3 Grill under a medium heat for about 4 minutes each side. Brush with more oil when you turn the fish over. Serve.

Variations:
Squeeze lemon juice over the fish. Marinade the steaks for an hour or two before cooking in simple mixture of wine/wine vinegar/oil and seasoning.
