Maatjes herrings in onion marinade Fish code 185805 Serves 4





280g / 10 oz maatjes herrings, cut into pieces
200ml / pt milk
200ml / pt soured cream
1 onion, thinly sliced
1 green and 1 red apple, thinly sliced
Freshly ground pepper
Paprika
1 tbsp chives, finely chopped
1 Soak herrings for one hour in the milk

2 Mix cream, onion and apple into a marinade

3 Drain herring, season with pepper and a little paprika. Add to marinade. Leave for several hours.

4 Arrange artfully on your best china plates.

5 Sprinkle with chives and paprika.

Brown bread makes an ideal accompaniment.
