4 mackerel, boned
125ml/5 fl oz olive oil
2 tbsp lemon juice
2 cloves garlic, crushed
2 tbsp chopped parsley
100g/4oz dry breadcrumbs
50g/2oz grated cheese
Large pinch salt
Dash black pepper
1 tbsp butter
125ml/5 fl oz cream

1 Combine oil, lemon juice, half crushed garlic and half the parsley and mix well to a sauce.
2 Mix breadcrumbs, cheese, remaining garlic, salt and seasoned pepper for coating.
3 Heat butter in a pan, dip fish in sauce then into coating and place in the pan.
4 Cook slowly, turning often and basting with the sauce, for about 15 mins when fish should become flaky.
5 Pour cream over the fish and sprinkle with remaining parsley.
