4 mackerel
1 lemon, zest and juice
½ tbsp chilli sauce
1 tsp soft brown sugar
Salt and pepper
½ tbsp parsley, chopped |
1 Make three deep slashes in both sides of each mackerel. Put in a shallow dish.
2 Combine lime, chilli sauce, sugar and seasoning. Pour over the fish, rubbing into the slashes. Leave for 30 minutes
3 Preheat grill to medium high. Transfer mackerel to grillpan. Grill for 10 minutes, brushing frequently with the marinade and turning the fish over after five minutes. Garnish with parsley. |
