Why would scabbard and banana go together so well? Doh! They're the same shape, aren't they?! In fact, you can do this with lots of other fish too, as long as you like fried banana. Try it with monkfish, or lemon sole.
2 silver scabbard fish steaks
2 bananas
1 clove garlic, crushed
25g/1oz butter
Salt and pepper
1 lemon
1 Cut the lemon in half and one half into quarters (for garnish).

2 Prick the skin of the scabbard fish lightly in a dozen places on each piece. Rub each side first with the half lemon (squeezing the lemon gently whilst doing so) and then with the garlic, aiming to introduce both flavours into the flesh of the fish.

3 Heat the butter in a frying pan. Squeeze any remaining juice out of your lemon into the pan. When bubbling lightly, peel and slice the bananas and fry gently for three minutes or so, turning all the time.

4 Add the scabbard fish to the pan. Fry each side for about two minutes.

5 Serve with the lemon wedges.
