1 onion, peeled and chopped
4 courgettes, sliced
100g/4oz mushrooms, sliced
2 tbsp sunflower oil
225g/8oz beansprouts
Juice of 1 lemon
1 tbsp soy sauce
75g/3oz cashew nuts
225g/8oz peeled prawns |
1 Fry the onion, courgettes and mushrooms in the oil for about 10 minutes.
2 Stir in the beansprouts, lemon juice, soy sauce, cashew nuts and prawns and cook for a further 5 minutes.
