DAWN KIPPERS

Grill under a medium heat for about 8 minutes, skin side down.

MIDNIGHT KIPPERS

1 Put kippers in a heatproof dish and warm in oven for 3-4 minutes.

2 Warm ¼ bottle of scotch whisky in a pan.

3 Pour whisky over kippers and set alight.

4 When the flames die down, you've cooked the kippers and they are ready to serve.
