This is a Mediterranean fish but it is occasionally caught off Cornwall. You could mistake it for the much more common gilt head bream, and at one time that would have seemed a compliment as the gilt-head was always reckoned to be ’top-bream’. But aquaculture has rendered the gilt head as common as sliced bread, whereas no one farms the black bream. However, a definitively wild habit is not its only distinction. In his excellent book, ’Fish’, posh chef Tom Aikens calls black bream ’one of the truly great, species.. a lovely fish with a simple taste.’ Our whole fish, are cleaned and de-finned. The fillets - when we have them, have been pin-boned (so they’re boneless). Latin: Sponylisoma cantharus.
