Veneration, awe and exaltation: enough said... Sadly, the sturgeon is now all but extinct in the wild. But it’s farmed in increasing quantities and quality. We own up to not doing the mystique part of caviar too well. The terms Imperial and Royal as applied to caviar mean, of course, less than nothing. To emphasise the point, we call our varieties just Number 1, Number 2 and Number 3.
But we do have excellent caviar. It comes from a small farm in northern Italy, family-owned and operated. We have been there, been round it, know them well and love what they do.
