If our fish stock isn't good enough, you'd better make your own, starting with a generous pack of fish bones.
Or go one better with fish head soup. Eight years ago a couple of Malaysian students from Surrey University visited Fish Palace. As they walked past our filleting station, they noticed a bin of halibut heads. They pointed, raised their eyebrows and asked... What happens to these? Which was short for Please Tell Us You Don't Just Throw These Away! What a rebuke. They left with a bulging bag of you guessed what, and we started selling heads. I confess they're a hard sell. But they're catching on.
