This is the classic ready-to-cook cut from a smaller fish. One fillet is normally one portion but a bigger fillet might serve two or three. Here's a tip: fillets usually contain a few pin bones. If we've removed these, we'll tell you. But our fillet steaks and bullets normally have no pin bones.
