Your first thought wil be 'fish pie' and indeed these will make fabtastic fish pies (did you ever add a few shelled mussels?). But you could also give them scampi treatment: poach in butter and dress up in a creamy sauce.

Being so fussy about our fillet steaks means the trimmings are often gorgeous great lumps of fish - just not big enough for a main serving. We skin these and sell them in portion-sized pillow packs. Enjoy top drawer fish at very good prices.
