Fish preserved in vinegar or brine is an iconic combination which comes in dozens of recipes. And for no fish more often than herring. How often are we asked for soused herring, Bismarck herring, rollmops, marinated herring? And once even for Solomon Gundy, a recipe fought over by Jamaica and Newfoundland (do you mean Solomon Grundy? - ed). Sorry, we can't provide them all but we do have some fine rollmops and marinated herring fillets. Our boquerones (from anchovies) are pretty special too - and a perfect nibble when guests come round. The appeal of rich tasting unagi kabayaki is popular way outside the Japanese community.
