Any fish can be smoked, but the process doesn't always produce a great result. Here is a collection of results. It comes from eight fish smokehouses, spread across the UK, each with a great reputation in their particular speciality and between them at least three centuries of experience. One has done all our smoked haddock for 25 years. Another has supplied our kippers for 23 years. But don't restrict yourself these two favourites. Please take the opportunity to try something new. Smoked scallops are sublime. Smoked tuna is really special. And every prawn-lover should try smoked prawns.
