Ceviche is one of those esoteric dishes that we have truly embraced. Our ceviche recipe is Yellowtail Kingfish marinated in citrus juices.

Making ceviche is very exciting. When you add the citrus juices, you can see them cooking the fish, turning the colour from translucent pink to opaque white.

This is the effect of the acid from the limes and lemons changing the proteins in the fish, cooking it without heat. AMAZING! 

The one thing that makes our ceviche recipe stand out from the rest is that it’s not too sour and is enhanced by our coconut sauce.
