This cut of fish is very similar to what we call a fillet steak, but it's a bit thinner and comes from the tail end of the fish. Due to the shape and thickness of it, these are slightly kinder on the wallet than the fillet steaks, but you still get the same great flavour and eating experience from them. Cod is one of the most popular fish in the UK so you won't be caught short when looking for a recipe. It can be fried, baked, grilled, or even deep fried (covered in batter of course) so you should have plenty of ideas!

Almost always this cod is line-caught from Iceland, an MSC certified fishery. Iceland has made fantastic progress in the management of their fisheries since near collapse in the 1970s. Iceland has gone through multiple successful sustainability recertification processes. We use large, mature cod for this cut.
