This is on-the-bone smoked haddock, originally 'invented' in the village of Findon, which you will find about five miles down the coast from Aberdeen. Ours, however, comes from our favourite family haddock smokery in Grimsby. It's smoked overnight in a traditional brick smokehouse to allow for a fuller flavour. It's also just perfect for poaching in milk.
