Escolar Fish

Escolar fish have big bulging eyes that look like spectacles. Hence the name, escolar being Spanish for "bespectacled academic brainbox" (more or less). But this fish's much bigger claim to fame is its high oil content. But don't miss one helping, because 20% oil tastes exquisite - take it from us.
