Many fish are known as kingfish but these are two of the best. The yellowtail kingfish - known as hiramasa in sushi bars - is a fine large fish from the southern hemisphere which is beginning to be farmed in large quantities. It has lean firm pearlescent flesh. The wahoo is an even larger fish. It is from warm waters and has darker flesh, which cooks to white. Both make great eating.
