Whiting

Whiting is a smaller member of the cod family, rarely more than about a foot long and often a lot less (cod can reach six feet). It lives in all the same waters as the cod, from Norway to Portugal and has good sustainability credentials. Long ago it had a reputation as being good for invalids - perhaps because the taste is quite neutral. Equally unfortunate was a style for serving it whole in a ring shape, the tail being pushed through the eye sockets. Madness. Stick to fillets.
