We make this stock ourselves. We use only turbot, brill and John Dory skeletons - to which we add carrots, leeks, fennel, celery, parsley and onion. Use as a cooking medium to elevate any fish onto a higher plane, or add vermouth, wine and/or cream to create a superb sauce.
