**PLEASE NOTE** The wax coating is a natural preservation method to maintain the freshness and nutrients of the product. The wax is typically a third of the stated product weight, and helps give it a 12 month shelf life.
- Bottarga - choose Greek or Sardinian
- Sardinian is hard for grating. Greek is soft for slicing.
- Greek bottarga is kosher and altogether showier.
Bottarga is compressed grey mullet roe. This rich delicacy - made all around the Mediterranean - is best eaten in tiny slices drizzled with olive oil, cayenne pepper and lemon juice then served with cold white wine as a pre-prandial nibble. Our Greek bottarga is from an old family firm. The pieces are large and enrobed in wax which keeps them moist for many months. It comes in a box of which a pricey Swiss chocolatier would be proud, looks better than fantastic and would make a great gift. It's chilled (not frozen) and will have a best before date at least a month ahead.
Update August 2021: Please be advised that our current stock has a best before date of November 2021. However, we ourselves would be happy to eat it well beyond this date (eg well past Xmas, if unopened beforehand). The date is best before date not an expiry date and is set conservatively.
