Hokkigai is the Japanese name for these vibrant surf clams. We source ours from a MSC certified fishery in Canada. They have been quickly blanched before freezing. They're pretty sizable pieces of meat, so they may be sliced. Just run the knife along the thin edge and the small inner bit at the base can be cleaned away. Often used for their striking colour being displayed over some sushi rice, surf clams may also be pan seared or sauted in some butter to help bring out their sweet flavour. They are firm by nature and because these ones have been blanched be sure to keep a watchful eye on the time, if you choose to cook them. Each pack contains 6-8 individually frozen clams.
