The ling we source is wild caught from UK waters. An odd looking fish some would say! It's a closely related cousin to the more commonly known cod and haddock. The main difference is its long tapered body, which sometimes does present more of those pesky bones. We endeavour to remove as many as possible, you'll need to be prepared to encounter a few. Some would also say that ling has a stronger taste than cod. However it brings the same versatility; large firm white flakes that can be grilled, fried or baked. Feeling more traditional? Ling is a great fish to be salted or dried. These fillet portions are steaks that have been cut from the tail end of the fish, perfect for frying. These are thinner than our ling fillet steaks.
