Sashimi grade tuna cuts from yellowfin tuna. This is fantastic quality because it was pristine fish in the first place and is kept super frozen - at minus 60C - until about 6 hours before it arrives at your house. Thus it retains its colour, texture and flavour to ensure you a premier sashimi experience - as long as you eat it PDQ. (When it gets to your freezer (at only minus 20C) it will lose its red hue within a couple of weeks although the taste will be unaffected for a while longer).
