This sweet and spicy laksa is a Southeast Asian inspired broth. It is very accommodating to all our seafood range especially mussels and clams. This broth has a large depth of flavour and each ingredient has a element of taste throughout each mouthful. Its rich and creamy, slightly sweet with a little kick of chilli. Add some noodles and a good fillet of fish and you have yourself a very traditional Asian style curry. Are you a soup lover? You can also use flour or cornflour to thicken the broth to enjoy as a soup. Put a tablespoon of either into a small bowl and stir in 2-3 tbsp of the broth until you have a smooth mixture. Stir this back into the broth and bring to a simmer.
